Ginger Stir-Fry
Couscous
2 Tbsp. peanut oil
7 green onions, chopped
7 baby carrot, julienne
2 garlic cloves, chopped
¾ c. raw cashews
2 c. snow peas
½ red pepper, julienne
¾ c. bean sprouts
2 or more drops Young Living ginger oil
1-2 drops Young Living black pepper oil
1-2 limes
Cook couscous according to package directions. In wok or deep fry pan, heat peanut oil on medium heat. Add green onions, carrots, and garlic. Cook for 2-3 minutes. Add cashews, snow peas, and red pepper. Cook for another 2-3 minutes. If vegetables and cashews start to stick, drizzle with more peanut oil. Add bean sprouts, ginger oil, and pepper oil, and toss. Cook for another 1-2 minutes. Serve over couscous and squeeze fresh limes on top. Also great with brown rice, pasta, or by itself. Makes 2-4 servings.
