SOUP RECIPES WITH ESSENTIAL OILS

Nothing is more comforting and soothing than a good soup. Add even more health-giving power to your soups with the aromatherapy recipes below featuring Young Living's essential oils.

Please remember to use only food grade essential oils for internal use. All of Young Living's oils are food grade and are safe to use in all types of cooking. Try some of the following recipes for your friends and family!

Coconut Milk Chicken Soup

4 c. chicken broth
1 large yellow onion, peeled, halved, and sliced
2 large carrots, peeled and sliced
2 celery stalks, diced
1 medium potato, peeled and diced (optional)
1 whole chicken breast, diced or shredded
1 can coconut milk (2 cans for richer broth)
1-2 Tbsp. Asian fish sauce
1-2 Tbsp. fresh lemon juice
1 small zucchini, halved and sliced
½-1 tsp. salt (optional)
1-2 drops Young Living basil oil
1-2 drops Young Living lemongrass oil
1 drop Young Living ginger oil

In large soup pot, simmer chicken broth then add onion, carrots, celery, and potato, and simmer 2 minutes. Add chicken and simmer another 5 minutes. Add coconut milk, fish sauce, lemon juice, zucchini, and salt. Simmer another 5 minutes. Take off heat and add essential oils. Makes 4 servings.

Garlic Barley Soup

4 c. water
1 ½ c. cooked pumpkin or mashed winter squash
1 medium red onion, chopped
½ c. toasted pumpkin or sunflower seeds
1 ¼ C rice milk
1 garlic clove, minced
4 tsp. vegetable bouillon
1 tsp. curry powder
1 drop thyme oil
½ c. pearl barley

Mix all ingredients (except for milk and seeds). Bring to a boil, reduce heat, and simmer 10-15 minutes. Cool.  Take half the mixture and puree. Return pureed mixture to pan and add rice milk. DO NOT BOIL. Sprinkle with seeds before servings. Makes 4 servings.
