Almond-Crusted Orange Chicken
4 chicken breasts (5 oz. each)
¾ c. almonds, raw and minced
1 tsp. poultry seasoning
1 tsp. water
1 egg
1 drop orange essential oil
1 Tbs. olive oil
Mix egg, water and drop of orange oil together. Dip chicken in it, then sprinkle with seasoning and press into almonds. Place on a baking sheet that has been sprayed with olive oil. Bake at 350 for 45 minutes or until interior of chicken breast reaches 160-165 degrees. Makes 4 servings.

Lavender Chicken
4 chicken breasts
1 drop of thyme oil
1 c. white cooking wine
4 tsp. lemon juice
2 Tbs. Dijon mustard
1 drop of lavender oil
1 c. blue agave
½ c. apple juice
Puree all ingredients (except chicken). Pour over chicken as a marinade, cover, and refrigerate for 3 hours. Bake chicken (in marinade) at 350 for 1 hour or until chicken is done. Remove chicken from pan. Reduce juices on stovetop until sauce is the consistency of syrup. Pour juices over chicken and serve. Makes 4 servings.

Turkey Burgers

¼ c. extra virgin olive oil
1 drop Young Living basil oil
1 drop Young Living orange oil
1 drop Young Living black pepper oil
1 drop Young Living lemon oil
1 Tbsp. chopped parsley
1 tsp. salt
2 cloves garlic, finely chopped
1 large green pepper, coarsely chopped
2 medium onions, coarsely chopped
4 ground turkey patties
4 whole-wheat hamburger buns
In a large skillet, combine extra virgin olive oil, essential oils, parsley, salt, garlic, green pepper, and onion, and sauté over low heat until lightly browned but slightly crunchy. Place mixture in separate bowl and brown patties in same pan until well done Toast buns. Layer patties and veggies on toasted rolls. Makes 4 servings.
